It started with a simple observation at a dinner party. As the dessert bowls came out, we noticed the table dividing. The “can-haves” and the “can’t-haves.” Whether it was for ethical reasons, allergies, or just a tummy that disagrees with dairy, half our friends were missing out on the joy of a proper scoop.
We didn’t want to make an “alternative.” We wanted to make a contender. We wanted a gelato so unctuous, so rich, and so structurally sound that you wouldn’t just tolerate it—you’d hoard it.
